Blintz Souffle

Dear Readers,

 

I found an excellent recipe on-line that saves alot of hassle when make blintzi for company. This recipe tastes like blintze but is so much easier to make for a crowd!

 

1/2 cup butter, softened

1/3 cup sugar

6 eggs

1-1/2 cups sour cream

1/2 cup orange juice

1 cup flour

2 tsps baking powder

Blintz filling (below)

Smetana (for topping)

Blueberry syrup or any other toppings you enjoy on Blintzi

 

Instructions:

Preheat oven to 350 degrees. Butter a 9 x 13 inch dish and set aside. In a large bowl, mix butter, sugar, eggs, sour cream, orange juice, flour, and baking powder until well blended. Pour 1/2 batter into 9 x 13 inch dish. Place remaining 1/2 batter aside. Prepare blintz filling.

 

Blintz Filling:

1 (8 oz.) package cream cheese, softened

1 pint small curd cottage cheese

2 egg yolks

1 T. sugar

1 tsp. vanilla extract

 

In medium bowl or food processor fitted with metal blade, combine all ingredients. Mix until well blended. Drop Blintz Filling by heaping spoonfuls over batter in dish. With a spatula or knife spreading filling evenly over batter; it will mix slightly with batter. Pour remaining batter over filling. Bake uncovered at 350 degrees for 50 - 60 minutes or until puffed and golden.

 

Serve immediately with sour cream and syrup or assorted jams.

 

May be mixed up a day ahead. Cover and refrigerate until ready to bake....bring to room temperature before baking.
