Quantities listed are general and can be adjusted to your taste. 1 Box Barilla Pasta Plus Rotini (has fiber and protein) Newmans Lighten Up Italian Dressing (or Family Restaraunt Recipe Italian) McCormick Salad Supreme Seasoning (important) Kraft Parmesan Cheese (optional) 4 Persian cucumbers (diced) or 1 English cucumber (diced) 1 Red Bell Pepper (diced) 1/4 Red Onion (diced) 1 small container of grape tomatoes (best to use these because diced tomato can get mushy) 1 small jar marinated artichoke hearts (diced/chopped) 1 small can sliced black olives Prepare the pasta according to the directions on the box. Let the pasta cool. Add all of the vegetables and lightly mix. Add salad dressing to coat the mix (but not too soggy), sprinkle on some Salad Supreme Seasoning (to your own taste) and if you want, sprinkle on some of the Parmesan cheese. Lightly mix the salad again. You can add more vegetables to this if you want. Place in an airtight container and refridgerate over night. You can add a little more salad dressing if it seems dry.
