Russiandoll 0 Report post Posted October 4, 2005 Chicken Stir Fry or Steak. Boil some Brown Rice. (You may add salt and butter for flavor.) keep rice in the pot, so it stays hot. Chicken Breast or Any sort Beef Steak. (Cut in slices or pieces and saute in Stir fry pan or Skillet. You may season with any seasonings of your choice.) After meat is cooked set aside. (Coat with non stick cooking spray or olive oil.) Add Stir fry vegetables to Stir fry pan or skillet. Saute until cooked about 10 minutes. (You can find these stir fry vegetables at Costco or the supermarket frozen section.) I like the chow mein mixed. (Coat pan with non stick or olive oil and you just need a little.) It adds a lot of flavor. Add the meat back to the pan with the vegetables and stir it together. When done take the rice and add the stir fry on top of your plate. I eat this a lot and it's very healthy and it helps my mom with her diabeties. Keeps the sugar in control but she eats very little rice or none; just mainly the vegetables and meat. You may add soy sauce if you like, but I usually don't use it, but if i do I use the low sodium one. Let me know if you decide to try this. It takes about 20 to 30 total minutes to make. I have some more quick dinner recipes. Macadamia Baked Whitefish Prep: 10 min, Cook: 10 min. 1/4 cup all purpose flour 1/4 tsp. onion powder 1/8 tsp. pepper 1 Tbs. unsalted butter 1 lb. whitefish fillets 1/4 cup macadamia nuts, finely chopped Preheat oven to 400°F. Combine first 3 ingredients in a shallow dish. Melt butter in a shallow baking dish in oven. Dredge whitefish in flour mixture to coat. Arrange in baking dish and turn to coat with butter. Sprinkle with nuts. Bake 10 minutes or until fish flakes easily. Fish Tacos Prep: 10 min, Cook: 5 min. 1/3 cup nonfat sour cream 2 Tbs. plus 2 tsp. fat-free mayonnaise 1/3 cup chopped fresh cilantro 1 ounce taco seasoning, divided 11 ounces cod fillets, or white fish, cut into small pieces 2 tsp. vegetable oil 1 Tbs. plus 1 tsp. lemon juice 1-1/3 cups shredded cabbage, red, green, or both 1-1/3 cups canned diced tomatoes 8 6 inch flour tortillas 1 Tbs. plus 1 tsp. taco sauce In a small bowl, combine sour cream, mayonnaise, cilantro, and half the seasoning mix. In a medium bowl, combine cod, vegetable oil, lemon juice, and remaining seasoning mix; pour into large skillet. Cook, stirring constantly, over medium-high heat for 4 to 5 minutes. or until cod flakes easily when tested with a fork. Fill taco shells with fish mixture. Top with cabbage, tomato, sour cream mixture, lemon juice, and taco sauce. Vegetable and Fish Bundles Prep: 10 min, Cook: 15 min. aluminum foil 4 whitefish fillets, or pollock fillets 1/4 lb. mushrooms\cooked, sliced 1/4 lb. tomatoes\cooked, sliced 1/4 lb. zucchini\cooked, sliced 1/4 lb. yellow squash, sliced 1 packet herb and garlic soup mix 1/2 cup water Prepare grill or broiler. Arrange fish equally on foil sheets. Top with vegetables. Combine soup mix and water in a bowl and pour evenly over vegetables. Wrap foil into packets, sealing edges tightly with a double fold. Spanish Chicken and Rice: 1 of each (chopped) green bellpepper, red bellpepper, onion 1 Tbsp butter or olive oil 1 1/2 to 2 cups diced or shredded cooked chicken (works for turkey also) 1 box Farmhouse Spanish Rice Mix 1 cups uncooked rice (I like Uncle Ben's but use whatever you like) 4 cups Hot water (or mixture of 2 cups hot water + 2 cups broth) 1 cup shredded cheese (mixture of cheddar & monterey jack works great) 1. Saute chopped veggies in butter or olive oil 2. Spray Microwaveable dish w/ Non stick spray 3. Mix veggies, Farmhouse rice mix, uncooked rice, chicken, cheese and water in deep 3 to 4 qt. microwaveable cookware. 4. Cover w/ wax paper and then with lid 5. Cook on High (100) for 10 minutes: then cook on Med (60) for 15 minutes.**do not open the lid** 6. Let stand for 5 minutes 7. Stir and serve w/ Tortilla Chips and Salsa I like to use microwave dishes that you can cook in and place directly on the table! Tuppperware has large cook and serveware. I don't think you would want the <chili cook-off borsh bowl fest> recipe if you're only cooking for 1. Or are you just interested in whatever quantity as long as it 30-40 minutes ? You cook your noodles as package directions (use what ever noodles you like) Buy a jar of your favorite spagettie sause Brown 1 pound of beef or turkey When noodles are done, drain and put into a baking dish pour spagettie sause over it sprinkle on parmashon (OMG sp?) cheeze and Mozzarella cheeze Cover with foil and bake for 30 min at 350 degrees Also, an easy favorite is Sloppy Joe. I brown 2 lbs of beef or turkey and I buy the packaged packette of sloopy joe seasonings, just follow the directions on the back of the packette to make the sauce!! The family loves sloppy joes!!
