Guerrero Whole Wheat Tortillas (No lard - no cholesterol) 1 can organic whole pinto beans 1 small can sliced or chopped olives (whatever your preference is) Low fat sharp cheddar cheese (grated) (or jabanero jack if you dare..) Low fat monterey jack cheese (grated) Alfalfa sprouts (regular or spicy) Shredded lettuce Low fat sour cream (optional) Salsa (chipotle salsa is good) Try "Cutter Dan's Si-Si Chipotle" Hot sauce (optional) Try "Cutter Dan's Smoky Alamo Chipotle" Pre heat the pinto beans in a covered bowl (zap them in the microwave) Heat a large non stick frying pan - place tortilla in the pan and heat - once both sides have been heated, put a little bit of the grated cheese mix evenly over the surface until it is melted. Transfer the tortilla to a plate and add a couple of tablespoons of pinto beans, a couple of teaspoons of the olives, and some salsa (be sure to drain the excess liquid off the salsa), and then some sprouts and a little bit of lettuce. You can add a little sour cream and hot sauce if you want. Serve with grilled veggies and you have a meal! Be careful - the tacos are little messy, but worth it! ligonier 0 Report post Posted June 22, 2006 I have tried these before (or at least a version that is very similar) and they are very tasty. Couple of things to add: If you use fat free refried beans, or at least mash up the pintos, it makes the whole thing neater (less messy) to eat. There is another brand of whole wheat tortillas, not sure of the name (it was Marias or Juanitas or something like that) that was thinner and tastier than Guerreros, but not as widely available in every supermarket. There is both habernero and jalapeno jack cheese available, I prefer the jalapeno, it seems to have more of the chile flavor without as much heat as the habanero. Alfalfa sprouts are for girls and don't belong in tacos. Try finely shredded cabbage instead of or along with the shredded lettuce, you'd be surprised how good it is in a taco. Cutter Dan's is available at Bristol Farms Market - so far, that is the only place I have been able to find it. If you can find it - it is worth it - its definetely not your every day salsa.
